Instant Pot Penne in Cajun Mustard Cream Sauce

I love anytime I can eat pasta with some sort of cream sauce. I especially love when I eat penne and can suck the sauce through the tubular pasta into my mouth. I know you do it too. I also love using cream cheese to flavor a pasta dish. It is so perfect to my taste buds.

The sausage is tasty and adds a lot of flavor. However, if you want to make it meatless, you can leave it out. I used a cajun-style andouille sausage but you can also use smoked sausage or kielbasa.

The mustard and lemon juice adds a twist to this cajun pasta. It’s a little different but a good different.

If you want to use a different type of pasta like rigatoni or bowties it’s no problem! Look at the back of the pasta package and it will say boil for x amount of minutes. To find out how long to pressure cook, take that number and divide by 2 and subtract 1. For example if it says boil for 10 minutes you’d divide that by 2 (5 minutes) and subtract 1 (4 minutes).

What Pressure Cooker Did You Use?

To make Instant Pot Penne in Cajun Mustard Cream Sauce I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly.  It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Instant Pot Penne in Cajun Mustard Cream Sauce


Description

Make this Instant Pot Penne in Cajun Mustard Cream Sauce for a quick and easy weeknight meal. With options to prepare it with andouille sausage or meatless you can make everyone happy. 


Ingredients

  • 12 ounces penne rigate pasta, uncooked
  • 2 1/2 cups chicken broth (for more flavor) or water
  • 2-3 tsp cajun seasoning
  • 1 tsp garlic powder
  • 1 Tbsp butter
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (13 oz) package cajun-style andouille smoked sausage (optional)
  • 4 oz cream cheese
  • 1 Tbsp lemon juice
  • 1 1/2 tsp dijon mustard

Instructions

  1. Add pasta to the Instant Pot. Pour broth/water over the top, try to cover pasta as much as possible. Sprinkle in 2 tsp of the cajun seasoning and add in the garlic powder. Add in the butter and petite diced tomatoes. If using sausage, slice it into 1/2 inch pieces and add it into the pot.
  2. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting for a quick release (you can also use a natural pressure release).
  3. Turn the pot to the saute setting and stir in the cream cheese, until it is melted. Turn off the saute setting. Stir in the lemon juice and dijon mustard. Taste and if needed add in another teaspoon of cajun seasoning. Salt and pepper to taste as needed.
  4. Serve and enjoy. Store leftovers in an airtight container in the refrigerator for up to 3 days.
