Instant Pot/Slow Cooker Meal Plan for a Month

The hardest part of cooking, for me, is coming up with a meal plan and figuring out what I want to make for dinner. I’m sure there are some of you that love this process but for the rest of us I’ve got a useful tool for you today. Here is a menu plan with dinners that you can make in the Instant Pot and slow cooker. Put those time saving counter appliances to good use this summer. They won’t heat up your kitchen and they’ll give you extra time to play.

I’ve used theme nights to make it easy to plan. You can easily switch these days around as per your preferences and what you have going on that week.

  • Monday: Meatless/Fish/Breakfast for dinner
  • Tuesday: Mexican foods (including tacos for Taco Tuesday)
  • Wednesday: Soups, Salads or Sandwiches
  • Thursday: Pasta or Italian Night
  • Friday: Out to eat or leftovers
  • Saturday: American Favorites or Grill Night
  • Sunday: Comfort Foods

Week One:

Monday: Santa Fe Rice and Beans with Lime Sour Cream (slow cooker or instant pot) and corn chips and cheese

Tuesday: Instant Pot/Slow Cooker Korean Tacos with purple cabbage, sriracha sour cream and avocados

Wednesday: Forgot to Defrost Doritos Taco Salad (slow cooker or Instant Pot)

Thursday: Garlic Parmesan Chicken with Fettuccine (instant pot or slow cooker) with steamed broccoli

Friday: Out to eat or leftovers

Saturday: Bacon Honey Mustard Chicken (slow cooker or Instant Pot) with rice, quinoa, noodles or mashed potatoes

Sunday: Swedish Meatballs (slow cooker or instant pot) and Mashed Potatoes


Week Two:

Monday: Bacon, Cheddar and Egg Casserole (instant pot or slow cooker) with pancakes or toast

Tuesday: Fish Tacos with garlic lime sour cream and cabbage

Wednesday: Beef and Cheddar Sandwiches (slow cooker or Instant Pot) with steamed vegetables

Thursday:Instant Pot Parmesan Lemon Pasta and Chicken with spinach

Friday: Out to eat or leftovers

Saturday: Instant Pot Lemon Garlic Salmon with Homestyle Vegetables

Sunday: Pesto Chicken Risotto (slow cooker or Instant Pot) with roasted vegetables


Week Three:

Monday: Creamy Polenta with Roasted Tomatoes and Mushrooms (slow cooker or Instant Pot)

Tuesday: Creamy Greek Chicken Pitas (slow cooker or Instant Pot) with cucumber, tomato and lettuce

Wednesday: Instant Pot/Slow Cooker Philly Cheesesteak Sandwiches with fresh veggies and dip and watermelon

Thursday: Lasagna (instant pot or slow cooker) with caesar salad

Friday: Out to eat or leftovers

Saturday: Instant Pot Broccoli Chicken Mac and Cheese with fresh fruit

Sunday: Mississippi Roast (slow cooker or Instant Pot) with mashed potatoes and roasted vegetables


Week Four:

Monday: Instant Pot Lemon Garlic Parmesan Shrimp Pasta with a tossed salad

Tuesday: Pork Chop Fajitas  with pico, guacamole, lettuce and tortillas

Wednesday: Instant Pot Bacon Chicken Avocado Salad

Thursday: Instant Pot Cheeseburger Pasta with broccoli

Friday: Out to eat or leftovers

Saturday: Kansas City Ribs (Instant Pot or slow cooker) with baked potatoes and green beans

Sunday: Lemon Herbed Chicken with Potatoes and Carrots (slow cooker or Instant Pot)

What Pressure Cooker/Slow Cooker Do You Use?

I use a 6 quart oval Kitchenaid slow cooker.* I love this slow cooker (you can see me talking about it in a video here). It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.

I use a 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly.  It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.
