Back in November of 2016, I caved to the pressure, and after seeing everyone rave endlessly over their Instant Pot, I finally snatched up a Black Friday deal and brought one home to call my own. I’m not going to lie, it was not love at first sight, not even a little bit. But I do love a challenge and with so many people on the pressure cooking obsession train, I figured I might as well figure out what all the fuss was about. You might think the next part of this story goes something like me finally using it for the first time and falling head over heels with how amazing it was, but you’d have that part wrong. I had recipe fails. More than a few. I was frustrated and couldn’t understand why anyone would want to use this silly machine in place of their slow cooker. But then, it finally all fell into place for me. This shiny kitchen gadget was no replacement for my slow cooker, it was a complement to my slow cooker. There are things it can do better, things it will never do as well, and times when you can make a choice about which one to use. Once I got my grove and found the ways in which this magical Instant Pot could make my life better, I became hooked. I thought it might be fun to share a few of my favorite ways to use it with you today, in case you are looking for some of your own kitchen inspiration!
First up – these egg bite molds!! Egg bites are kind of like what you can get at Starbucks, but much cheaper and so quick and easy to make yourself. My daughter actually likes the ones I make better than the ones you can buy! Plus you can customize the fillings/flavors. I make up a couple of batches of these on the weekends and we heat them up for quick weekday breakfasts.

Want to cook your entire dinner in one pot? I love how the Instant Pot lets me do that!! Just add your meat to the bottom and your veggie to a steamer basket on top and you are all set for one of the easiest dinners on the planet! I’ve done this with everything from pork chops to roast beef and I can’t tell you how much my family loves these dinners. I also love how easy they are to make and clean up!

Okay, this is another egg one but equally as awesome because just think of all the things you can do with hard boiled eggs. I got an egg steamer rack recently and it’s pretty amazing. Making hard boiled eggs in the Instant Pot is truly a game changer. No hassle of boiling water, worrying about timing or cracked eggs, just set it and that’s it. Perfect hard boiled eggs every time. I love to use them for a quick breakfast, for egg salad, for adding some protein to a tossed green salad and for deviled eggs.
